Swallow's Nest Concentrate 5 , 10 rice wine , ginger 10 , 1 salt , alum 1. ================================================= Weight swallow nests after
scalding increases 10 times. When ordering prepared
swallow's nest scalded in boiling water with the addition of alkali (barium
hydroxide) in order to make it fully swelled. Thereafter, it is thoroughly
washed in warm water to remove alkali.
Chicken broth, seasoned with
ginger extract, rice vodka and concentrate is poured into a soup bowl, a bowl
or deep plate. Ready to swallow's nest served on a small plate separately.
